Emma loves cooking up a storm in her kitchen. Here are some of her favorite recipes that don’t contain any processed sugar. Enjoy!
Grain free crunchy muesli
1 cup chopped macadamia nuts
½ cup chopped pecans
1 cup coconut chips
½ cup dried blueberries
½ cup pumpkin seeds
½ cup sunflower seeds
1 cup chopped almonds
1 table spoon maple syrup
2 teaspoons cinnamon
Method
In a large bowl add almonds, maple syrup and cinnamon and mix until almonds are coated. Place on a tray lined with baking paper and bake in a moderate oven for approximately 20 min. Remove and cool.
Mix all other ingredients in a large bowl and add cooled maple, cinnamon almonds.
Serving suggestion:
Add ¾ cup of crunchy muesli to your favourite coconut yoghurt and serve with berries.
Raw Fudge Balls
1 cup of medjool dates
1 cup raw almonds (Or consider combining with macadamias, walnuts or cashews)
½ cup desiccated coconut
¼ cacao powder
1 tablespoon flaxseed oil
Method
Place all ingredients in a food processor and blitz until finely minced. Roll into small balls and roll balls in more desiccated coconut. Refrigerate for 2 hour.
Raw Chilli Chocolate slice
2 cups walnuts
2 cups medjool dates
1 cup cacao powder
2 tbsps flaxseed meal
1 tsp cinnamon
1 tsp chilli powder
Pinch Celtic sea salt
Ganache
¼ melted coconut oil
½ cup cacao powder
2 tbsp maple syrup
½ teaspoon chilli powder
½ teaspoon cinnamon
1 tsp red chilli flakes
Method
Line a square baking pan with baking powder.
In the food processor add walnuts, chilli powder, flax meal, and cinnamon, pulse until finely ground. Add cacao powder and dates. Press the mixture into the pan.
In a small bowl mix the ganache ingredients and whisk until smooth. Spread this over the base of the slice. Sprinkle with chilli flakes and place in the fridge for 1 hour. Cut into squares and keep refrigerated.
